The Story Behind Our All-Natural Blueberry Vegan Macarons

At Macaron Centrale, every macaron tells a story, and our Blueberry Vegan Macarons are no exception. From the ingredients we use to the intricate design, these macarons are a labor of love, crafted with care and precision. Here’s a look behind the scenes at what makes these blueberry treats so special.

A Vision of Natural Goodness

It all started with a simple idea: create a macaron that’s not only delicious but made entirely from natural ingredients. We’ve always been passionate about offering treats that people can feel good about eating, which is why we committed to keeping our Blueberry Vegan Macarons free from artificial flavors, colors, and preservatives. After experimenting with different natural ingredients, we found the perfect formula.

The Vibrant Blue Color: Spirulina Magic

The striking blue hue of our macaron shells is one of the first things you’ll notice. But did you know it’s all thanks to blue spirulina powder? Sourced from Amazon, this natural, nutrient-rich algae gives our macarons their signature blue color. It’s not just a visual treat—spirulina is known for its antioxidant properties, making these macarons as nourishing as they are beautiful.

The Art of the Splatter

We wanted to add an artistic touch to these macarons, which is where the Thai black coffee brew comes in. We don’t use the coffee for flavor in the shell, but instead, we splatter the brew over the macaron tops to create a striking contrast against the blue. It’s a subtle, creative detail that makes each macaron unique, almost like a miniature painting.

Flavor That Speaks for Itself

When it came to the filling, we knew we had to strike the perfect balance. Inside each macaron, you’ll find the smooth, rich flavor of Madagascar vanilla paired with the tartness of our organic blueberry compote. We source the finest ingredients to ensure every bite is packed with flavor. The result? A filling that perfectly complements the airy, delicate shell.

Mastering the Vegan Macaron

Creating a vegan macaron with the perfect texture took some trial and error, but we found the secret: Blue Diamond almond flour and aquafaba. We make our aquafaba by slow-cooking garbanzo beans in a pressure cooker for 3.5 hours to achieve just the right consistency. This allows us to recreate the light, chewy texture that you expect from traditional macarons, all while keeping it 100% plant-based.

With each bite, you're not just tasting a macaron—you’re experiencing the care, craftsmanship, and creativity that goes into making every batch. From the vibrant color to the unique design and mouth-watering flavors, our Blueberry Vegan Macarons are more than a treat; they’re a story waiting to be shared.
